Description: Collard Greens are a member of the cabbage family. Their leaves are broad, paddle-shaped and green-gray to deep green in color with white ribs and veins.

Nutritional Value: Collard Greens contain anti-inflammatory properties in the form of omega-3 fatty acids and vitamin K.

Kale

Notes: Kale has realized an increased in popularity. It is a very healthy and hearty product. Bunches are consistently large and have plenty of length.

Description: Green Kale is a leafy vegetable that is a member of the cabbage family. Green Kale has a long hard stem running through the leaf, which has tender, curled edges.

Nutritional Value: An excellent source of vitamin C, Kale provides iron, vitamin A, calcium, magnesium, potassium, protein, carbohydrates and dietary fiber. One half cup of chopped boiled Kale contains about 18 calories.

Turnips

Notes: The poster boy of greens, Turnips are a consistent dependable green.

Description: Turnip Greens are deep green colored leafy vegetables. They are most often cooked with chopped roots. They have an assertive taste, but milder than mustard greens.

Nutritional Value: Turnip Greens contain compounds which have cancer preventing benefits, including antioxidants, anti-inflammatory and natural detoxifying properties.

Curly Mustard

Notes: We have traditionally shipped more curly type than flat. Curly Mustard is also more tolerant to colder temperatures.

Description: Curly Mustard has broad, wavy frilled leaves with longitudinal veins. Upright leaves are supported by thin pale green stems. Their flavor is robust with bold peppery nuances.

Mustard (Slick/Flat)

Notes: Mustard is a Southern favorite. Easy cleaning and excellent flavor make it a choice product. It can’t handle hard freezes and is prone to bolt in early spring.

Description: A mild flavored mustard, producing large broad yellow leaves. Slick Mustard is a favorite of the Southeastern states.

Turnip Roots

Notes: Turnip Roots are a staple of many families. Our Turnip Roots are cleaned, trimmed and sized to assure shelf appeal.

Description: The root itself is roughly 3 inches in diameter, two-toned with magenta blushed tops and white bottoms, which flow into the bulb’s tapered thin taproot.

Nutritional Value: Turnip Roots are a good source of complex carbohydrates. One cup of cubed turnips contains about 33 calories.

Cilantro

Notes: Cilantro is the only herb we grow. Its heat tolerance and vigor as a plant makes it a good fit for our region.

Description: Although slightly resembling flat leaf Parsley in appearance, Cilantro can be distinguished by its unmistakable aroma and flavor.

Nutritional Value: The leaves and stems are rich in anti-oxidants, and a good source of minerals like potassium, calcium manganese, iron and magnesium.

Dandelion

Varieties: Punto

Notes: Often regarded as a weed, although every part of the Dandelion is edible.

Description: Offers a slightly bitter taste, often used in salads, teas and herbal remedies.

Parsley

Notes: The market for Beets has been steadily growing. Our Beets boast of uniformity and large, dark green leaves.

Description: The Beet bulb is noted for its sweet and earthy flavor. It boasts the highest sugar content of any vegetable, yet remains low in calories.

Nutritional Value: Beets are one of nature’s most nutritious and healing foods. They are rich in the B vitamin folate, vitamin C and dietary minerals, like manganese, potassium, magnesium and iron.

Broccoli

Chards

Notes: While Chards are a beautiful commodity, they can be difficult to grow.

Description: Rich green, Chards lovely leaves grow on a pale whitish-green stalk. The good-looking crinkly and shiny leaves offer a taste that lies somewhere between asparagus and celery, with possibly a hint of beet.

Nutritional Value: One cup of cooked Chards contain about 35 calories. An excellent source of vitamin A, potassium and iron. It is also a good source of vitamin C, calcium and fiber.

Green Cabbage

Notes: We have been growing Cabbage for 20 years. While there are many varieties on the market, we believe we have found varieties that produce consistent, compact Cabbage that is extremely marketable.

Description: Green Cabbage has tightly enveloped superimposed pale green leaves, with variations of pea green colorings. They are thick, broad, deeply veined and waxy in their finish.

Nutritional Value: Green Cabbage is an excellent source of antioxidants and vitamin C.

Dutch (Flat) Cabbage

Notes: Flat Cabbage is an early season cabbage. We look forward to increasing acreage ad developing new customers.

Description: This flat specialty Cabbage is a standout for its big, mild-tasting leaves, with up to 30 per head, making terrific sandwich wraps.

Nutritional Value: Low in calories, Cabbage offers vitamin C, folic acid, calcium, potassium and is an excellent source of antioxidants.

Napa Cabbage

Notes: Napa Cabbage is a fairly new product for us and we’ve had huge success with it.

Description: Napa Cabbage is known for its signature barrel-shaped and crisp, pale green, tightly-wrapped leaves. The outer leaves curve inward and are true green to pale green. The interior leaves and hear are yellow to ivory colored.

Nutritional Value: Low in calories, it offers vitamin C, folic acid, calcium and potassium. It is said that Cabbage simulates the immune system and helps to prevent cancer. Napa Cabbage is an excellent source of antioxidants.

Red Cabbage

Varieties: Rio Grande, Red Dynasty

Notes: We have grown Red Cabbage to compliment Green Cabbage sales for 20 years.

Description: Red Cabbage is distinguished by its coloring, texture and flavor. Like Green Cabbage, it is rounded and wrapped in tightly wound waxy leaves. The leaves are more violet and burgundy versus a true red.

Nutritional Value: The concentration of anthocyanin polyphenols in Red Cabbage provides far greater health benefits than that of Green Cabbage varieties.

Savoy Cabbage

Notes: Savoy Cabbage is another cabbage we grow to compliment our Green Cabbage sales.

Description: Oval shaped and delicate, Savoy Cabbages produce wrinkled crisp leaves. The color ranges from a light to dark green. It has a very mild flavor with a hint of sweetness.

Nutritional Value: Low in calories, it offers vitamin C, folic acid, calcium and potassium. It is said that Cabbage stimulates the immune system and helps to prevent cancer.

Zucchini

Varieties: Fancy, Large, Medium

Notes: Highly versatile and can be enjoyed raw in salads, sautéed, grilled or spiralized as a low-carb pasta alternative.

Acorn Squash
